Arrack emerges as a distinctive distilled spirit with roots primarily in Sri Lanka and Southeast Asia, crafted from the naturally fermented nectar of coconut blossoms or sugarcane, with regional variations incorporating grain (particularly red rice) or fruit. Alternative spellings include arak, while informal shorthand references it simply as 'rack or 'rak. Important to note: this unique spirit stands distinct from the anise-infused distilled beverage also called arak or araq. Throughout numerous Indian regions, arrack carries the colloquial designation "desi daru."
Two predominant arrack styles exist with markedly different characteristics: Batavia arrack typically presents with clarity in appearance yet delivers a flavor profile reminiscent of dark rum, distinguished by its characteristic "funk" or "hogo" imparted through fermented red rice. Sri Lankan (Ceylon) arrack offers a contrasting experience—more sophisticated and nuanced in character. It evokes subtle notes reminiscent of cognac and rum while delivering an intricate bouquet of delicate floral essences. Both varieties also appear in homemade iterations produced by local populations, sometimes resembling unrefined moonshine in presentation
